Imagine having homemade cookies ready to bake whenever you want them! That’s the whole idea behind icebox cookies — and I wanted to share some personal favorites from my vintage recipe collection.
Named for the iceboxes that kept food cold before electric refrigerators, these cookies let bakers prepare dough ahead of time and bake fresh cookies whenever they wanted to. And who doesn’t want cookies on demand?
They’re quick to make from ingredients you probably have on hand most of the time and they’re endlessly adaptable. From lemons to dates, walnuts, pistachios, and more, these slice-and-bake cookies just might become your new favorites!
This icebox cookie from the 1960’s was one of the first cookies I made for this series, and for good reason. I love citrus anything and the toasted pecans are a perfect pairing (and perfect for dunking in a hot cup of tea)!

Lemon Pistachio Pinwheel Icebox Cookies with a White Chocolate Finish
I wanted to make a cookie that featured pistachios but couldn’t find anything in my vintage recipe collection. Lemons and pistachios are a great flavor match, so I used the Lemon Pecan Icebox Cookie recipe from the 1960’s as a base and converted it into a pinwheel cookie. An optional garnish of white chocolate adds a little decadence (if you like that sort of thing)!

These may look simple but there’s a ton of flavor packed in this little cookie from the 1930s! Brown sugar brings a caramel note and the toasted walnuts add richness. They’re a perfect sweet bite, especially with a cup of coffee!
